Sweet eyesicles....CUPCAKES!

For a while now i have been on a quest for the best frosting recipe. I finally found it!!! Thank you to Louise from Cake Journal for her easy to follow Italian Meringue Buttercream recipe. I love this recipe because it's soooo creamy and it's not too sweet.

I made cupcakes for our good friend of ours who's about to have a baby. The baby items used as decorations are made out of marshmallow fondant.

One thing i found about this frosting however is that its best to use it on the same day when it's made. I have yet to have luck whipping it to the desired consistency after refrigerating it.

Congrats again, Karen and Chris! Hope you guys enjoyed teh little treat.

Happy 6th Year Anniversary

For weeks i've worked on different designs to incorporate in the 6th year anniversary cake that will be making for my hubby and I. A day before the cake will be assembled my son had a little accident and spilled water on all the molded fondant that i've prepared :(

This is all i could save from it. Thank goodness the lady bugs were still okay.

Happy 6th anniversary daddy! I love you much....mwah!

Thank you Auntie Sadia!

After 3 years of baby sitting our little pride and joy we are finally going to say goodbye. My little boy will be staying home with daddy during the day because now his schedule permits this.

As a thank you to out wonderful baby sitter, i made her the Lemon Cream Cupcakes that i got from allrecipes.com.

The recipe for the cupcake is a little too dense to our liking. It tasted more of a muffin than a cupcake. It did have great flavor though. The cutouts are made of marshmallow fondant that my son is quite fond of. Moms, be careful of sugar rush :)

Thank you again Auntie Sadia! We will surely miss you.

Cupcakes for my son's teacher

I decided make mini cupcakes for my junior kindergarten son's teacher as a thank you for all her hard work and dedication.

She was very appreciative of the thoughtful gesture and has shared it with the rest of the faculty. I sure hope the enjoyed them as i much as i enjoyed making them.

Thank you to all the teachers out there! You have help mold us to become better citizens.

My First Cupcake

Now that i've made my first cake i wanted to make more. I found the whole experience quite fulfilling. I'm so excited because i now have a new hobby.

A good friend of mine shared a recipe that she has tried by Paula Deen for the red velvet cupcake. I decided to give it a go as the reviews were very impressive.

I made the little red/black apples using gumpaste. My son called the black ones blueberries so we can go with that :) The cupcakes tasted great! However i was having problems with the frosting as they get quite runny. I found that it's best to refrigerate it for a little bit before frosting the cupcakes with it.

My husband and i agreed that the frosting was toooo sweet for our taste so i don't think i will make it again. This is the start of the quest for the best cupcake/cake frosting :)

My First Cake

The first cake that i made was for my hubby's 30th birthday. After countless hours of watching videos on how to bake a cake as well as how to mold shapes out of gumpaste i finally made my first masterpiece :) At least that's what i called it.

It may not look like much to some people but i was quite happy with how it turned out being my first cake. Here are some pictures of it.
